Black Bean Salad – Gluten Free
1 (15-ounce) can Goya black beans (drained and rinsed)
1/2 seedless cucumber (rinsed)
1 cup diced fresh tomatoes
1/2 cup matchstick carrots
1/2 cup shredded Mexican-blend cheese
1/2 cup light olive oil vinaigrette
1 small can corn
1. Place beans in large bowl. Chop cucumber and tomato into bite-size pieces; add to beans.
2. Stir in remaining ingredients; chill until ready to serve.
Alternate ingredient tips:
Spice it up! Throw in a chopped jalapeno or Serrano pepper
Add a chopped avocado, cilantro, chopped black olives or red onion
Garnish with lime wedges and a spoonful of sour cream
